Saag Gosht with Dry-fried Tofu
This is a satisfying vegan version of saag gosht, which I usually make with lamb. I dry fried the tofu to give it a little more texture.

Simple one pot vegan version of my favorite chicken tagine. Melty onions, briney olives, creamy potatoes. Super good hot or cold.
Mushroom Green chili
This isn’t the prettiest, but it is a very satisfying green chili that is good on its own, or anywhere you would use pork green chili.
Veggie Lasagna Bowl
This isn’t lasagna, but it has all the ingredients, it’s faster, and decent pantry velcro for whatever veggies need using up.
Pepper Sisters Pozole
Another pozole. More spicy vegetable soup than chili. Lots of tomatoes and veggies.
