Red Pepper Hummus
*Damn, we make a lot of orange food.
Ingredients:
- 15 oz. garbanzo beans (drained if using canned – reserving liquid)
- 1/4-1/2 C. cooking or canning liquid (or water if you forgot)
- 2 Tbsp. lemon juice
- 2 Tbsp. low-sodium soy sauce
- 2 Tbsp. tahini (or peanut butter)
- 1/2-1 clove of garlic
- Dash of cayenne pepper
- Dash of smoked paprika
- 1 red bell pepper
Instructions:
- Roast red pepper until blackening.
- Cover red pepper or wrap in plastic wrap and let steam until cool
- Pull the blackened peel off the pepper. Cut open and remove seeds and membranes.
- Add ingredients to blender (high speed works to make the smoothest texture).
- Blend until smooth – adjusting liquid if needed.
Cook’s Notes:
You can probably make this in a regular blender or food processor, but my high speed really makes the texture amazing.
