Jalapeno Cilantro Dressing
A great foundational dressing for salads or Mexican food.
Ingredients
- 2 jalapeno
- 2 cloves garlic
- 1/2 cup cilantro (I usually use the whole bunch)
- 1 tsp salt
- 1 cup cashews (raw)
- 1 16 oz container silken tofu
Remove the seeds and membrane from the jalapeno. Throw everything into the blender and let it run until everything is smooth and beautiful.
Taste it – it might need a little salt (or add 1 tsp of Ume plum vinegar). You can also add an avocado if you want it to be super silky.

This recipe makes about 2 squeeze bottles of dressing (2-3 cups) and will last up to 2 weeks in the fridge. If it starts to look like it’s separated, chuck it, it’s turned.
