Utah “Cob” Salad
Ingredients
- 6 cobs worth of cooked corn, preferably grilled, chilled, and removed from cobb (3 Cups)*
- 1 can of black beans, drained and rinced
- 2 ripe tomatoes, chopped into 1/4″ pieces
- 1 cucumber, seeded and chopped into 1/4″ pieces
- 2-3 Tbsp. finely chopped cilantro
- 2-4 Tbsp. chili powder (depending on spice level)
- 1-2 Tbsp. olive oil (optional)
- Kosher salt to taste
- Fresh ground black pepper to taste
Instructions
- Combine corn, beans, tomatoes, cucumbers, and cilantro in a medium bowl.
- Add chili powder, salt, pepper, olive oil (if using) to taste.
- Refrigerate and let sit 15-30 minutes. Serve cold.
Notes
* In a pinch (or winter) use frozen or steam-packed canned corn.
