Thai Chickpea Cauliflower for Salads
Ingredients:
– 1 lb cooked chickpeas
– 1/2 cauliflower head, cut into small pea size pieces
Directions:
– Steam cauliflower and add to chickpeas
– Toast in the paella pan with sauce:
– 2 Tbs Peanut Butter
– 2 Tbs Red Wine Vinegar
– 1 Tbs lime juice
– 1tsp Fish Sauce
Chill and serve on salads. Enjoy!
