A Vaguely Thai Like Salad
Ingredients
- 1 can (15 oz.) black beans, rinsed and drained
- 1 can (15 oz.) pinto beans, rinsed and drained
- 1 C. finely chopped cilantro
- 1/2 C. shredded cucumber, peel and all
- 1/2 C. shredded carrot
- 2 1/2 C. cooked grains (brown rice, farro, etc.)
Dressing
- 1/3 C. rice wine vinegar
- 2 Tbsp fish sauce *
- 1 tsp. sesame oil
- 1 tsp. chili garlic sauce (small jar, green lid, rooster on it)
Instructions
- Whisk together ingredients for the dressing
- Fold together the ingredients for the salad
- Add about 1/2 the dressing to the salad. Mix and taste. Add more dressing if needed to taste.
- Serve.
Cook’s Notes
* I know this isn’t “vegan.” Don’t care.
This salad becomes even more amazing with the addition of sriracha sauce at tableside.
