Creamy Ranch’ish Dressing
This is based on a Portillos Chicago Style Dressing. I first enjoyed it at a friend’s house and it was absolutely drinkable. However, since it was also full of dairy, I made some edits to make it vegetarian friendly.
Ingredients
- 3/8 cup white wine vinegar
- 16 oz silken tofu
- 3 Tbs lemon juice
- 4 tsp Italian Seasoning
- 5 cloves garlic
- 3/4 cup raw cashews
- 1.5 tsp white miso
- 5 tsp lime juice
- 5 Tbs nooch
Place all ingredients into the blender and mix until everything is smooth and creamy.
Because this is a total hack job of a decent dressing recipe, all of these amounts are approximate and can be adjusted for your personal taste. Add more lemon juice if needed. I would recommend adding 1 TBS of Ume plum vinegar if it needs a little bump in flavor.
