Perfectly Potted Piquant…Jackfruit?
Ingredients
- 2 cans of green jackfruit in brine*
- 1 onion, finely diced
- 3 Tbsp. crushed garlic
- 1 tsp. cumin
- 2 Tbsp. chili powder
- 2-3 oz. apple juice
- 2 Tbsp. lime juice
- 2-3 oz. beer**
Instructions
- Drain the jackfruit and chop.
- Add all of the ingredients to a dutch oven over medium heat and stir to combine.
- Bring to a simmer and reduce heat to maintain.
- Simmer for 30-40 minutes, stirring occasionally, until the onions “melt” into a sauce.
- Serve with taco fixin’s; Corn tortillas, cabbage, salsa, habanero sauce, lime wedges, cilantro, etc.

* I find this in the Asian grocery store.
** Use a light or amber ale.
