“Cheaze” Sauce
Ingredients
- 2 C. cashew milk
- 1 C. chopped sweet potato
- 1 C. cashews
- 10 cloves garlic
- 1 eggplant, roasted and peeled*
- 2 Tbsp. rice vinegar
- 3 Tbsp. “nooch”**
- 2 Tbsp. white miso
- 1 tsp. kosher salt
- 1 tsp. black pepper
- 2 tsp. smoked paprika
- 1/8 tsp. cayenne pepper (optional)
Instructions
- Add sweet potato, cashews, garlic, and vinegar to a saucepan and cover with water. Bring to a simmer for 10-15 minutes until sweet potatoes are soft
- Drain saucepan contents and add to a blender with salt, pepper, paprika, and cayenne (if using).
- Blend whilst slowing adding cashew milk. Blend until extremely smooth.
- Let cool slightly. Add nooch and miso. Blend until mixed well.
Cook’s Notes
*Roast eggplant at 350′ for 40-45 minutes. Cool. Peel. Rip open and let drain whatever liquid.
** Nutritional yeast. Hippy fish food. Whatever you wanna call it.
