Southwestern Black Bean Soup
Ingredients
- 1 onion, chopped
- 1 red pepper, chopped
- 3 cloves of garlic, minced
- 1 can diced tomatoes
- 2 cans black beans, rinsed
- 1 tsp. chili powder
- 1/2 tsp. cumin
- 1/2 tsp. oregano (Mexican if possible)
- 1 Tbsp. fish sauce (or soy sauce)
- 1 Tbsp. sherry vinegar (or whatever vinegar you like)
- 6 C. vegetable broth
- Salt
Instructions
- Heat a soup pot or dutch oven over medium high heat. Add the onion and a small pinch of salt. Sauté until soft.
- Add red pepper, garlic, chili powder, and cumin and continue to cook, stirring constantly until fragrant – 1-2 minutes.
- Add tomatoes, beans, oregano and broth.
- Cook for 15-25 minutes, until red pepper is soft and flavor have melded.
- Remove from heat. Add fish sauce and vinegar. Taste and adjust seasoning if necessary.
- Serve.
