Pinto Beans “Queso”
Ingredients
- 3 C. Pinto beans (drained)
- 1 Tbsp. tahini
- 1 Tbsp. lemon juice
- 1/4 tsp. mustard
- 1/2 tsp. soy sauce
- 2 Tbsp. nutritional yeast
- 1/4 tsp. onion powder
- 1/8 – 1/4 C. broth or water
- 1-2 C. salsa
- Hot sauce to taste
Instructions
- Combine beans, tahini, lemon juice, mustard, soy sauce, nutritional yeast, and onion powder in a food processor and process to desired consistency. Add broth if too thick.
- Stir in salsa and hot sauce. Taste for seasoning. Add more soy sauce and lemon juice if necessary.
- Serve as a dip or a great bean burrito filling.
