Spicy Black Bean Hummus
Ingredients
- 2 – 15 oz. cans black beans, drained, canning liquid reserved, and rinsed
- 1/3 C. (approx) reserved canning liquid (or water)
- 1 clove garlic
- 1 chipotle pepper in adobo sauce*
- 2 Tbsp. lemon juice
- 2 Tbsp. low-sodium soy sauce
- Dash of smoked paprika (to taste)
- Dash of Cayenne pepper (to taste)
Instructions:
- In a blender or food processor, process garlic, chipotle pepper, and lemon juice until finely, finely chopped.
- Add remaining ingredients. Process until very smooth.
- Serve with pita, crackers, bread, or veggies.
Cook’s Notes:
* These are smoked and canned jalapeño peppers, usually found in the Hispanic/Latin food aisle. The adobo sauce in which they are packed is wicked hot and amazing. You could add another pepper, or just some of the adobo sauce if you want this to be spicier.
