Mustard Miso Dressing
Ingredients
- 2 Tbsp. apple cider vinegar*
- 1 Tbsp. lemon juice
- 2 cloves of garlic
- 1/4 C. spicy brown mustard**
- 1 Tbsp. brown miso
Instructions (these do matter, believe it or not)
- Add vinegar, lemon juice, and garlic to the blender. Blend well.***
- Add mustard and miso. Blend well.
- Thin with water to desired consistency (if needed).

* …or whatever vinegar please God.
** …or whatever coarse mustard please God.
*** Thanks to Serious Eats, I learned that blending garlic with acids reduces the garlic “burn” without reducing the tasty garlic flavor. So, if you want, you can feel free to kick up the garlic in this dish (or many others) by first blending the garlic up with whatever acids may be in your particular dish.
